Cut Out Cookies

Sometimes I need a lot of cookies in short order so I use this cut out cookie recipe. They are infinitely adaptable with frosting and flavorings so they can be used for any occasion.

Cut Out Cookies

Makes 6 dozen cookies

  •  1 cup shortening
  • 2 cups light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 5 cups all-purpose flour
  • 1 teaspoon Diamond kosher salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1/4 cup whole milk

Preheat the oven to 400 degrees Fahrenheit. Spray baking sheets with cooking spray.

Cream together shortening and light brown sugar.

Add the eggs and vanilla extract and beat until fluffy.

Sift all-purpose flour. Add Diamond kosher salt, baking soda, and baking powder.

Sift again.

Add the dry ingredients to the creamed ingredients, alternating with milk,

Stir until dough is smooth.

Chill dough for several hours.

Roll out to 1/4 inch thickness and cut into fancy shapes with various cookie cutters.

Put one inch apart on a greased baking sheet.

Bake 8 – 10 minutes.

Cool and enjoy!
